Who wouldn't enjoy a rainbow cupcake left behind by a leprechaun? I found a DIY recipe and nailed it for my kiddos. The recipe always made it's way to my agenda every March and my students always enjoyed them not to mention Lucky's footprints were left behind too all around the classroom.
