#NAILED IT! Usually on St. Patty’s day, rainbow cupcakes make it's way to my agenda along with a note from my favorite leprechaun, Lucky, a pot of delicious gold coins, and Lucky's footprints all over my classroom. I found a rainbow cupcake recipe courtesy of somethingswanky.com that was too cute and I nailed it if I say so myself!
THERE'S A BIG DIFFERENCE BETWEEN FOOD PASTE AND FOOD COLOR!
Who knew? Not I :) Make sure you use food color paste otherwise the colors will run together if you use food color. Thank you, Ashton, for stating that you use Williams-Sonoma food color paste! We all know some bloggers like to keep secrets. I ordered it online and my cupcakes came out great the first time too. One year I purchased Wilton Performance Color System from Michaels. It came in the same shape bottle and the liquid appeared thick like the paste and in my mind, I came to the conclusion it was the same. However, I didn't t fully trust myself! I'm also the same kid who thought baking soda could replace baking powder when making pancakes and it didn't work out too well! So if you test it out, please let me know how it goes lol.

I only consider myself a part-time baker so maybe one day, I’ll actually be able to make cupcakes from scratch lol. I actually use Duncan Hines Lemon Mix opposed to plain old vanilla and my kiddos enjoy them! Oh, how I miss Cool Whip icing :( Once upon a time, Cool Whip made frosting and it was my favorite out the can frosting but it no longer exists. I actually mix cool whip with frosting to attempt to make the same taste! I say try it if you like fluffy frosting.

Sometimes Lucky and I go a little “wild” with my decorating and switch it up with his sigature touch of gold! Sometimes we make black frosting and add a gold coin or sprinkles. My kids picked up on our minor humor. Sometimes we just keep it white with gold spray or sprinkles. Every year they enjoy them! Plus it warms my heart to know I ‘m creating a childhood memory for them.
